2 cups Rice
3 eggs
3 tbsp Oil
100 gms Beans Finely Chopped
2 Carrot Finely Chopped
1 Onion Sliced
100 gms peas
2 Spring Onions Finely Chopped (optional)
2 tbsp Soya Sauce
Salt & pepper to taste
Method
- Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
- Boil water, add rice and little salt.
- Cook uncovered on low heat till rice is tender.
- Take care not to overcook the rice. Each grain of rice should be separate.
- When rice is done, drain and add some cold water and drain again using a large seive and set aside.
- Heat oil in a large skillet over medium heat. Add onion and saute until soft and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.
- Stir in carrots, pea pods and beans and stir-fry another 5 minutes. Then add rice and stir thoroughly.
- Finally, stir in scrambled eggs and one tsp soy sauce, heat through and serve hot.
